Step-by-Step Recipe:
Step 1: Marinate the Chicken
1. In a large mixing bowl, add the chicken pieces, ginger-garlic paste, soy sauce, red chili sauce, vinegar (or lemon juice), and egg.
2. Add the cornflour and all-purpose flour to coat the chicken. This gives the chicken a crispy texture when fried.
3. Add a pinch of salt and pepper. Mix everything well so the chicken is evenly coated with the spices and sauces.
4. Let the chicken marinate for at least 30 minutes. This will help the chicken absorb all the flavors.
Step 2: Fry the Chicken
1. Heat oil in a deep frying pan.
2. Once the oil is hot, add the marinated chicken pieces. Fry them in batches to avoid overcrowding the pan.
3. Fry the chicken until it turns golden brown and crispy. Drain the excess oil by placing the fried chicken on paper towels.
Step 3: Prepare the Sauce
1. In another pan, heat 2 tablespoons of oil. Add the chopped ginger-garlic and sauté until golden and fragrant.
2. Add the diced onions, green chilies, and bell pepper. Stir-fry on high heat for 2-3 minutes, keeping the vegetables crunchy.
3. Add the soy sauce, red chili sauce, tomato ketchup, vinegar, and sugar. Mix everything well.
4. Add salt and pepper as per taste.
5. Pour in the cornflour slurry (cornflour mixed with water) to thicken the sauce. Stir continuously to avoid lumps.
Step 4: Combine Chicken and Sauce
1. Once the sauce thickens slightly, add the fried chicken pieces to the pan. Toss everything together, making sure the chicken is coated with the sauce evenly.
2. Cook for another 2-3 minutes to allow the flavors to blend.
Step 5: Garnish and Serve
1. Garnish with freshly chopped spring onions for a pop of color and flavor.
2. Serve hot with fried rice, noodles, or enjoy it as a starter!
Pro Tips:
For extra spice, you can add more green chilies or use chili oil.
For a healthier option, you can air-fry or bake the chicken instead of deep frying.
Adjust the consistency of the sauce by adding more water if you prefer a gravy version of chilli chicken.
Chilli Chicken is a must-try for anyone who loves a burst of flavors in every bite. It’s a dish that will surely become a family favorite, perfect for weekend dinners or special occasions.
